- 1 egg

- 1 1/4 cups unbleached flour

- 1 cup quick oats
- 1 cup semi-sweet mini chocolate chips
- 1/2 cup chopped pecans (optional)
Instructions
- Preheat oven to 350°F.
- Line a baking sheet with parchment paper.
- Cream together softened butter, granulated sugar, and brown sugar until smooth.
- Add egg and vanilla; mix until well combined.
- Stir in flour, baking soda, and salt until just combined.
- Fold in oats, chocolate chips, and pecans gently.
- Scoop dough onto the prepared baking sheet, spacing them about 3 inches apart.
- Bake for 8–9 minutes until edges are golden brown but centers remain soft.
- Allow to cool on the baking sheet for 10–15 minutes before transferring to a cooling rack.
Notes
For thicker cookies, chill the dough for 30 minutes before baking. Use high-quality chocolate chips for richer flavor.
