Description

A delicious and creamy chicken gnocchi soup inspired by Olive Garden’s famous recipe.


Ingredients

  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups cooked chicken, shredded
  • 1 package (16 oz) gnocchi
  • 2 cups fresh spinach
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add diced onion, garlic, carrots, and celery; sauté until vegetables are tender.
  3. Stir in thyme and rosemary, cooking for an additional minute.
  4. Pour in chicken broth and bring to a boil.
  5. Add gnocchi and cook according to package instructions.
  6. Reduce heat and stir in heavy cream and shredded chicken.
  7. Add fresh spinach and cook until wilted.
  8. Season with salt and pepper to taste before serving.

Notes

  • For a lighter version, substitute heavy cream with half-and-half.
  • Feel free to add more vegetables like mushrooms or peas.
