Ingredients

  • 4 chicken thighs
  • 1 cup rice
  • 1 cup chicken broth
  • 1/2 cup honey BBQ sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 cup mixed vegetables (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large oven-safe pan, heat olive oil over medium heat.
  3. Season the chicken thighs with salt and pepper, then brown them in the pan for about 5 minutes on each side.
  4. Remove the chicken from the pan and set aside.
  5. Add rice and chicken broth to the pan, stirring to combine.
  6. Place the chicken thighs back in the pan and drizzle with honey BBQ sauce.
  7. If using, add mixed vegetables around the chicken.
  8. Cover the pan with a lid or foil and bake for 25-30 minutes.
  9. Remove from the oven and let it sit for a few minutes before serving.

Notes

  • For extra flavor, marinate the chicken in BBQ sauce for a few hours before cooking.
  • Feel free to substitute chicken thighs with breasts if preferred.
