- 4 chicken thighs
- 1 cup rice
- 1 cup chicken broth
- 1/2 cup honey BBQ sauce
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 cup mixed vegetables (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large oven-safe pan, heat olive oil over medium heat.
- Season the chicken thighs with salt and pepper, then brown them in the pan for about 5 minutes on each side.
- Remove the chicken from the pan and set aside.
- Add rice and chicken broth to the pan, stirring to combine.
- Place the chicken thighs back in the pan and drizzle with honey BBQ sauce.
- If using, add mixed vegetables around the chicken.
- Cover the pan with a lid or foil and bake for 25-30 minutes.
- Remove from the oven and let it sit for a few minutes before serving.
Notes
- For extra flavor, marinate the chicken in BBQ sauce for a few hours before cooking.
- Feel free to substitute chicken thighs with breasts if preferred.
- This dish can be made with brown rice, but cooking time may vary.
