- 1 pound Kielbasa
- 2 tablespoons Honey
- 3 cloves Garlic, minced
- 2 tablespoons Soy Sauce
- 1 each Bell Peppers (red & yellow)
- 1 cup Baby Carrots
- 1 pound Baby Potatoes
- 2 tablespoons Olive Oil
- 2 tablespoons Fresh Parsley or Green Onions
Instructions
- Preheat your oven to 400°F (200°C).
- Slice the kielbasa into bite-sized pieces.
- Prepare the vegetables by cutting the bell peppers into strips and halving the baby potatoes.
- Toss the kielbasa, bell peppers, baby carrots, and baby potatoes in a large bowl.
- Drizzle with olive oil and toss to coat.
- Mix the honey, minced garlic, and soy sauce in a separate bowl.
- Pour the honey garlic mixture over the kielbasa and veggies, tossing everything to ensure even coating.
- Spread the mixture out on a large baking sheet in a single layer for even cooking.
- Bake for 25-30 minutes, stirring halfway through, until the veggies are tender and the kielbasa is heated through.
- Remove from the oven, and sprinkle with fresh parsley or green onions for color.
- Serve warm and enjoy with your loved ones!
