Ingredients

  • 1 packet taco seasoning
  • 8 oz pasta (elbow or rotini)
  • 2 cups beef broth
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup shredded cheddar cheese
  • 1 cup corn (frozen or canned)
  • 1/2 cup diced onion
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat olive oil over medium heat and add diced onion. Sauté until translucent.
  2. Add ground beef and cook until browned. Drain excess fat.
  3. Stir in taco seasoning and mix well.
  4. Add pasta, beef broth, and diced tomatoes to the skillet. Bring to a boil.
  5. Reduce heat, cover, and simmer for about 10-12 minutes or until pasta is cooked.
  6. Stir in corn and cheddar cheese until melted and well combined.
  7. Season with salt and pepper to taste before serving.
