An easy and delicious family dinner recipe that combines the flavors of tacos with pasta in a one-pot meal.

- 1 lb ground beef
- 1 packet taco seasoning
- 8 oz pasta (elbow or rotini)
- 2 cups beef broth
- 1 can diced tomatoes (14.5 oz)
- 1 cup shredded cheddar cheese
- 1 cup corn (frozen or canned)
- 1/2 cup diced onion
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- In a large skillet, heat olive oil over medium heat and add diced onion. Sauté until translucent.
- Add ground beef and cook until browned. Drain excess fat.
- Stir in taco seasoning and mix well.
- Add pasta, beef broth, and diced tomatoes to the skillet. Bring to a boil.
- Reduce heat, cover, and simmer for about 10-12 minutes or until pasta is cooked.
- Stir in corn and cheddar cheese until melted and well combined.
- Season with salt and pepper to taste before serving.
Notes
- For a spicier version, add jalapeños or hot sauce.
- This dish can be made with ground turkey or chicken for a lighter option.
- Leftovers can be stored in the refrigerator for up to 3 days.
