Description

A hearty and comforting one-pot meal featuring tender chicken and a medley of vegetables, perfect for a family dinner.


Ingredients

  • 4 chicken thighs
  • 2 carrots, sliced
  • 1 onion, chopped
  • 2 potatoes, diced
  • 2 cups chicken broth
  • 1 cup green peas
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chicken thighs and brown on both sides.
  3. Remove the chicken and set aside.
  4. Add the onion, carrots, and potatoes to the pot and sauté for 5 minutes.
  5. Return the chicken to the pot and add the chicken broth, thyme, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for 30 minutes.
  7. Add the green peas and cook for an additional 5 minutes.
  8. Serve hot and enjoy!
