- 4 chicken thighs
- 2 carrots, sliced
- 1 onion, chopped
- 2 potatoes, diced
- 2 cups chicken broth
- 1 cup green peas
- 2 tablespoons olive oil
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the chicken thighs and brown on both sides.
- Remove the chicken and set aside.
- Add the onion, carrots, and potatoes to the pot and sauté for 5 minutes.
- Return the chicken to the pot and add the chicken broth, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Add the green peas and cook for an additional 5 minutes.
- Serve hot and enjoy!
