Ingredients

- 1 cup lentils
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can diced tomatoes
- 2 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add chopped onion and garlic, sauté until translucent.
- Stir in bell pepper and cook for another 2 minutes.
- Add lentils, diced tomatoes, vegetable broth, cumin, chili powder, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 25-30 minutes until lentils are tender.
- Serve hot, garnished with fresh cilantro if desired.
Notes
- Adjust spices according to your taste.
- Can be served with rice or tortillas.
- Leftovers can be stored in the refrigerator for up to 3 days.
