Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can diced tomatoes
  • 2 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add chopped onion and garlic, sauté until translucent.
  3. Stir in bell pepper and cook for another 2 minutes.
  4. Add lentils, diced tomatoes, vegetable broth, cumin, chili powder, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 25-30 minutes until lentils are tender.
  6. Serve hot, garnished with fresh cilantro if desired.
