- 1 cup long-grain rice
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes with green chilies
- 1 cup corn kernels
- 1 cup vegetable broth
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
Instructions
- In a large pot, combine the rice, black beans, diced tomatoes, corn, vegetable broth, chili powder, cumin, salt, and pepper.
- Bring the mixture to a boil over medium-high heat.
- Reduce the heat to low, cover, and simmer for about 20 minutes, or until the rice is cooked and the liquid is absorbed.
- If using, sprinkle cheese on top and cover until melted.
- Serve hot and enjoy!
