Description

Ingredients

  • 1 can black beans, drained and rinsed

  • 1 cup corn kernels
  • 1 cup vegetable broth

  • 1 cup shredded cheese (optional)

Instructions

  1. In a large pot, combine the rice, black beans, diced tomatoes, corn, vegetable broth, chili powder, cumin, salt, and pepper.
  2. Bring the mixture to a boil over medium-high heat.
  3. Reduce the heat to low, cover, and simmer for about 20 minutes, or until the rice is cooked and the liquid is absorbed.
  4. If using, sprinkle cheese on top and cover until melted.
