  • 4 cups chicken broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and garlic, sauté until translucent.
  3. Stir in the chicken thighs and cook until browned.
  4. Add shawarma spice mix, salt, and pepper, stirring to coat the chicken.
  5. Pour in the diced tomatoes and chicken broth, bringing to a simmer.
  6. Add the basmati rice, stirring to combine.
  7. Cover the pot and reduce heat to low, cooking for 20 minutes or until rice is tender.
  8. Remove from heat and let it sit covered for 5 minutes.
