Description

A refreshing and vibrant orzo salad perfect for spring dinners.


Ingredients

Scale
  • 1 cup orzo pasta
  • 2 cups cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste


Instructions

  1. Cook the orzo pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cherry tomatoes, cucumber, red onion, parsley, and feta cheese.
  3. Add the cooled orzo to the vegetable mixture.
  4. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  5. Pour the dressing over the salad and toss to combine.
  6. Chill in the refrigerator for at least 30 minutes before serving.
