Description

A delicious and healthy way to enjoy eggplant, baked to perfection with Italian flavors.


Ingredients

Scale
  • 2 medium eggplants, sliced
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the eggplants and sprinkle with salt. Let them sit for 30 minutes to draw out moisture.
  3. Rinse the eggplant slices and pat them dry with paper towels.
  4. Brush the eggplant slices with olive oil and place them on a baking sheet.
  5. Bake the eggplant for 20 minutes, flipping halfway through.
  6. Remove from the oven and layer marinara sauce, mozzarella, and Parmesan cheese on top of each slice.
  7. Sprinkle with Italian seasoning, salt, and pepper.
  8. Return to the oven and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
  9. Let cool for a few minutes before serving.

Notes

  • For a spicier version, add red pepper flakes to the marinara sauce.
  • Serve with a side salad for a complete meal.
  • Leftovers can be stored in the refrigerator for up to 3 days.
