Delightful oven baked shrimp skewers infused with a zesty cilantro and lime marinade, perfect for any gathering.
Ingredients

- 4 cups loosely packed cilantro stems & leaves, rinsed and pat dry
- 6 cloves garlic
- 1/4 cup olive oil
- 2 limes, juiced and zested
- 1 Tablespoon honey
- 1 teaspoon EACH cumin & Morton kosher salt
- 2 Tablespoons salted butter, melted
- 1 1/2 pound raw 21/25 large shrimp, peeled and deveined, pat dry
Instructions
- Add the cilantro, garlic, olive oil, lime juice, lime zest, honey, cumin, and salt into a large food processor.
- Blend until smooth.
- Remove about 2 Tablespoons of the cilantro marinade and whisk it into a small bowl of melted butter. Set aside.
- Combine the marinade and shrimp in a large bowl. Toss until well combined.
- Cover and marinate in the fridge for 30-60 minutes.
- Preheat the oven to 450 degrees.
- Line a baking sheet with parchment paper.
- Pierce the shrimp using the sharp end of the skewer.
- Repeat threading 5-6 shrimp per skewer. You should have about 6 kabobs.
- Bake for 7-8 minutes and broil if desired.
- Brush hot shrimp with the butter sauce.
Notes
For a spicier kick, consider adding chili flakes or fresh jalapeños to the marinade. Avoid overcooking the shrimp to maintain their tenderness.
