Description

Delightful oven baked shrimp skewers infused with a zesty cilantro and lime marinade, perfect for any gathering.


Ingredients

Scale
  • 4 cups loosely packed cilantro stems & leaves, rinsed and pat dry
  • 6 cloves garlic
  • 1/4 cup olive oil
  • 2 limes, juiced and zested
  • 1 Tablespoon honey
  • 1 teaspoon EACH cumin & Morton kosher salt
  • 2 Tablespoons salted butter, melted
  • 1 1/2 pound raw 21/25 large shrimp, peeled and deveined, pat dry


Instructions

  1. Add the cilantro, garlic, olive oil, lime juice, lime zest, honey, cumin, and salt into a large food processor.
  2. Blend until smooth.
  3. Remove about 2 Tablespoons of the cilantro marinade and whisk it into a small bowl of melted butter. Set aside.
  4. Combine the marinade and shrimp in a large bowl. Toss until well combined.
  5. Cover and marinate in the fridge for 30-60 minutes.
  6. Preheat the oven to 450 degrees.
  7. Line a baking sheet with parchment paper.
  8. Pierce the shrimp using the sharp end of the skewer.
  9. Repeat threading 5-6 shrimp per skewer. You should have about 6 kabobs.
  10. Bake for 7-8 minutes and broil if desired.
  11. Brush hot shrimp with the butter sauce.

Notes

For a spicier kick, consider adding chili flakes or fresh jalapeños to the marinade. Avoid overcooking the shrimp to maintain their tenderness.
