Delicious and easy-to-make crumble bars featuring fresh peaches and a creamy layer, perfect for spring desserts.

- 2 cups fresh peaches, diced
- 1 cup all-purpose flour
- 1 cup rolled oats
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 cup cream cheese, softened
- 1 egg
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking dish.
- In a bowl, mix together flour, oats, brown sugar, cinnamon, and salt.
- Add melted butter to the dry ingredients and mix until crumbly.
- Press half of the mixture into the bottom of the prepared baking dish.
- In another bowl, beat together cream cheese, granulated sugar, egg, and vanilla until smooth.
- Spread the cream cheese mixture over the crust in the baking dish.
- Top with diced peaches and sprinkle the remaining crumble mixture on top.
- Bake for 30-35 minutes or until golden brown.
- Allow to cool before cutting into bars.

- For best results, use ripe peaches.
- These bars can be served warm or chilled.
