Description

Delightful fusion of pecan pie and muffins with the sweetness of brown sugar and the crunch of toasted pecans.

Ingredients

Scale
  • 2 cups All-purpose flour (Can substitute with a gluten-free blend)
  • 1 teaspoon Baking soda
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Salt
  • 1 teaspoon Cinnamon
  • 1/2 cup Unsalted butter (melted)
  • 1 cup Light brown sugar
  • 2 large Eggs
  • 1/2 cup Sour cream
  • 1/2 cup Whole milk
  • 2 teaspoons Vanilla extract
  • 1 cup Finely chopped pecans
  • 1/2 cup Whole pecan halves
  • 1/4 cup Brown sugar
  • 2 tablespoons Melted butter

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a muffin tin by greasing it or lining it with muffin liners.
  2. Whisk together the all-purpose flour, baking soda, baking powder, salt, and cinnamon in a large mixing bowl. Set aside.
  3. Combine melted butter, light brown sugar, and eggs in another bowl, mixing until well blended.
  4. Stir in the sour cream, whole milk, and vanilla extract, ensuring everything is combined smoothly.
  5. Add the dry ingredients to the wet ingredients, mixing until just combined; avoid overmixing.
  6. Fold in the finely chopped pecans gently until evenly distributed.
  7. Divide the batter among the prepared muffin cups, filling them about two-thirds full.
  8. Sprinkle brown sugar on top of each muffin and place a whole pecan half in the center.
  9. Drizzle melted butter over the tops for added richness.
  10. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  11. Allow muffins to cool for a few minutes in the tin before transferring to a wire rack.

Notes

For a low-sugar option, consider sugar substitutes like stevia or monk fruit. Be sure to toast your pecans for enhanced flavor.
