- 1 whole or bone-in pieces chicken
- 1/4 cup olive oil
- 2 fresh lime juice
- 4 cloves garlic, minced
- 2 teaspoons ground cumin
- 1 tablespoon smoked paprika
- 1 tablespoon dried oregano

- 1 cup fresh cilantro leaves
- 1-2 jalapeños or serrano peppers
- 1/2 cup mayonnaise
- 1/3 cup Cotija or Parmesan cheese

Instructions
- Preheat your oven to 425°F (220°C).
- Pat the chicken dry with paper towels, ensuring it’s free of excess moisture.
- Whisk together the olive oil, lime juice, minced garlic, ground cumin, smoked paprika, dried oregano, salt, and pepper in a bowl.
- Rub the chicken all over with the marinade, making sure to get it under the skin for maximum flavor.
- Place the chicken on a baking sheet or in a roasting pan.
- Roast in the oven for about 50-60 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is crispy.
- Prepare the green sauce by blending together the cilantro, jalapeños, mayonnaise, cheese, and additional salt and pepper to taste.
- Remove the chicken from the oven and let it rest for about 10 minutes.
- Carve the chicken, drizzle with the green sauce, and serve with lime wedges on the side.
Notes
Marinate the chicken for deeper flavor and store leftovers in airtight containers for up to 3 days.
