  • 1 box yellow cake mix
  • 1 can (15 oz) mandarin oranges, undrained
  • 1 can (20 oz) crushed pineapple, undrained
  • 1 cup sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 cup chopped pecans (optional)
  • 1 container (8 oz) whipped topping
  • 1 package (3.4 oz) instant vanilla pudding mix

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the yellow cake mix, mandarin oranges (with juice), crushed pineapple (with juice), sugar, vegetable oil, and eggs. Mix until well combined.
  3. Fold in the chopped pecans if using.
  4. Pour the batter into a greased 9×13 inch baking pan.
  5. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  6. While the cake is baking, prepare the frosting by mixing the whipped topping and instant vanilla pudding mix in a bowl until smooth.
  7. Once the cake has cooled, spread the frosting evenly over the top.
  8. Chill in the refrigerator for at least 2 hours before serving.

  • For added flavor, you can include shredded coconut in the frosting.
