A delightful Southern dessert that combines the flavors of mandarin oranges and pineapple with a light, fluffy cake.

- 1 box yellow cake mix
- 1 can (15 oz) mandarin oranges, undrained
- 1 can (20 oz) crushed pineapple, undrained
- 1 cup sugar
- 1 cup vegetable oil
- 4 large eggs
- 1 cup chopped pecans (optional)
- 1 container (8 oz) whipped topping
- 1 package (3.4 oz) instant vanilla pudding mix
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the yellow cake mix, mandarin oranges (with juice), crushed pineapple (with juice), sugar, vegetable oil, and eggs. Mix until well combined.
- Fold in the chopped pecans if using.
- Pour the batter into a greased 9×13 inch baking pan.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- While the cake is baking, prepare the frosting by mixing the whipped topping and instant vanilla pudding mix in a bowl until smooth.
- Once the cake has cooled, spread the frosting evenly over the top.
- Chill in the refrigerator for at least 2 hours before serving.
Notes
- For added flavor, you can include shredded coconut in the frosting.
- This cake is best served chilled.
- Store leftovers in the refrigerator for up to 3 days.
