Ingredients

  • 1 can of crushed pineapple (20 oz)
  • 1 cup of sugar
  • 1 cup of all-purpose flour
  • 1/2 cup of unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon of baking powder
  • 1 teaspoon of vanilla extract
  • 1/2 cup of shredded coconut (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the crushed pineapple (with juice), sugar, and melted butter.
  3. Add the eggs and vanilla extract, mixing well.
  4. In a separate bowl, whisk together the flour and baking powder.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. If using, fold in the shredded coconut.
  7. Pour the batter into a greased baking dish.
  8. Bake for 30-35 minutes or until golden brown and a toothpick inserted in the center comes out clean.
  9. Let it cool before serving.
