Description

A delightful and moist pineapple bread perfect for spring desserts.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup crushed pineapple, drained
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the flour, sugar, baking soda, and salt.
  3. In another bowl, cream the butter and sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the crushed pineapple and vanilla extract.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Pour the batter into a greased loaf pan.
  8. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
