Description

Delicious and soft sugar cookies topped with caramelized pineapple, perfect for spring desserts.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup crushed pineapple, drained
  • 1/2 cup brown sugar
  • 1/4 cup maraschino cherries


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. In a separate pan, melt the brown sugar and add the crushed pineapple, cooking until bubbly.
  7. Spread the pineapple mixture evenly on the bottom of a greased baking dish.
  8. Drop spoonfuls of the cookie dough over the pineapple mixture.
  9. Bake for 20-25 minutes or until the edges are golden brown.
  10. Let cool for a few minutes before inverting onto a serving platter.
