- 1 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup crushed pineapple, drained
- 1/2 cup brown sugar
- 1/4 cup maraschino cherries
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- In a separate pan, melt the brown sugar and add the crushed pineapple, cooking until bubbly.
- Spread the pineapple mixture evenly on the bottom of a greased baking dish.
- Drop spoonfuls of the cookie dough over the pineapple mixture.
- Bake for 20-25 minutes or until the edges are golden brown.
- Let cool for a few minutes before inverting onto a serving platter.
