- 1/2 cup sugar
- 1/4 cup butter, softened
- 1/2 cup strawberry puree
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- Pink food coloring (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together the softened butter, cream cheese, and sugar until smooth.
- Add the egg, vanilla extract, and strawberry puree, mixing until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. If desired, add a few drops of pink food coloring to enhance the color.
- Drop spoonfuls of the cookie dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
