Ingredients

  • 1 cup pistachio nuts, shelled
  • 1/2 cup sugar
  • 1/4 cup unsalted butter, melted
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 pre-made pie crust

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a food processor, blend the pistachio nuts until finely ground.
  3. In a mixing bowl, combine the ground pistachios, sugar, melted butter, heavy cream, vanilla extract, and salt.
  4. Roll out the pie crust and cut it into small circles to fit into a muffin tin.
  5. Press the pie crust circles into the muffin tin and fill each with the pistachio mixture.
  6. Bake for 20-25 minutes or until the filling is set and the crust is golden.
  7. Let cool before serving.

Notes

  • For a richer flavor, consider adding a pinch of cardamom.
  • These cups can be made a day in advance and stored in the refrigerator.
