Ingredients

- 1 cup pistachio nuts, shelled
- 1/2 cup sugar
- 1/4 cup unsalted butter, melted
- 1/2 cup heavy cream
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 pre-made pie crust
Instructions
- Preheat the oven to 350°F (175°C).
- In a food processor, blend the pistachio nuts until finely ground.
- In a mixing bowl, combine the ground pistachios, sugar, melted butter, heavy cream, vanilla extract, and salt.
- Roll out the pie crust and cut it into small circles to fit into a muffin tin.
- Press the pie crust circles into the muffin tin and fill each with the pistachio mixture.
- Bake for 20-25 minutes or until the filling is set and the crust is golden.
- Let cool before serving.
Notes
- For a richer flavor, consider adding a pinch of cardamom.
- These cups can be made a day in advance and stored in the refrigerator.
- Garnish with whipped cream or additional crushed pistachios if desired.
