- 6 ripe black or red plums, halved and pitted
- 2 tbsp honey
- 1/4 tsp ground cinnamon
- 1 tsp balsamic vinegar
- 1 can (14 oz) sweetened condensed milk
- 2 cups heavy cream
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat oven to 400°F (200°C). Place halved plums on a baking sheet and drizzle with honey, cinnamon, and balsamic vinegar.
- Roast for 25-30 minutes until soft and syrupy. Let cool slightly, then blend into a smooth puree.
- In a large bowl, whisk sweetened condensed milk, vanilla, salt, and cooled plum puree.
- In another bowl, whip heavy cream to soft peaks. Gently fold into plum mixture until combined.
- Pour into a loaf pan, cover with foil, and freeze for at least 6 hours or overnight.
- Scoop and serve as-is or with optional toppings like balsamic reduction or shortbread cookies.
