- 3 ripe bananas
- 2 cups whole wheat flour
- 1/2 cup protein powder
- 1/2 cup honey or maple syrup
- 1/4 cup unsweetened applesauce
- 1/2 cup Greek yogurt
- 2 eggs
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, mash the ripe bananas until smooth.
- Add the honey (or maple syrup), applesauce, Greek yogurt, and eggs to the mashed bananas and mix well.
- In another bowl, combine the whole wheat flour, protein powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Stir in the vanilla extract.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the loaf cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
- For added flavor, consider adding nuts or chocolate chips to the batter.
- This loaf can be stored in an airtight container for up to a week.
