Ingredients

  • 1 cup almond flour
  • 1/2 cup protein powder
  • 1/4 cup coconut sugar
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 2 large eggs
  • 1/2 cup unsweetened applesauce
  • 1/4 cup almond milk
  • 1 cup mixed berries (fresh or frozen)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a doughnut pan.
  2. In a large bowl, mix together the almond flour, protein powder, coconut sugar, baking powder, cinnamon, and salt.
  3. In another bowl, whisk the eggs, applesauce, and almond milk until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Gently fold in the mixed berries.
  6. Pour the batter into the prepared doughnut pan, filling each cavity about 3/4 full.
  7. Bake for 15-20 minutes or until a toothpick inserted comes out clean.
  8. Let the doughnuts cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For a sweeter doughnut, increase the coconut sugar to taste.
