- 1 cup almond flour
- 1/2 cup protein powder
- 1/4 cup coconut sugar
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 2 large eggs
- 1/2 cup unsweetened applesauce
- 1/4 cup almond milk
- 1 cup mixed berries (fresh or frozen)
Instructions
- Preheat the oven to 350°F (175°C) and grease a doughnut pan.
- In a large bowl, mix together the almond flour, protein powder, coconut sugar, baking powder, cinnamon, and salt.
- In another bowl, whisk the eggs, applesauce, and almond milk until well combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Gently fold in the mixed berries.
- Pour the batter into the prepared doughnut pan, filling each cavity about 3/4 full.
- Bake for 15-20 minutes or until a toothpick inserted comes out clean.
- Let the doughnuts cool in the pan for a few minutes before transferring to a wire rack to cool completely.
Notes
- For a sweeter doughnut, increase the coconut sugar to taste.
- These doughnuts can be stored in an airtight container for up to 3 days.
- Feel free to substitute the mixed berries with your favorite fruits.
