- 1 package of puff pastry (2 sheets)
- 2 cups fresh spinach, chopped
- 1 cup ricotta cheese
- 1 cup feta cheese, crumbled
- 1 egg, beaten
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1 clove garlic, minced
Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
- Add chopped spinach and cook until wilted, about 2-3 minutes.
- In a bowl, combine the cooked spinach, ricotta cheese, feta cheese, beaten egg, salt, and pepper.
- Roll out the puff pastry sheets on a floured surface and cut into squares.
- Place a spoonful of the spinach mixture in the center of each square.
- Fold the pastry over to form triangles and seal the edges with a fork.
- Place the pies on a baking sheet lined with parchment paper.
- Brush the tops with a little beaten egg for a golden finish.
- Bake for 20-25 minutes or until golden brown.
