Description

Ingredients

  • 1 package of puff pastry (2 sheets)
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup feta cheese, crumbled
  • 1 egg, beaten
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 clove garlic, minced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
  3. Add chopped spinach and cook until wilted, about 2-3 minutes.
  4. In a bowl, combine the cooked spinach, ricotta cheese, feta cheese, beaten egg, salt, and pepper.
  5. Roll out the puff pastry sheets on a floured surface and cut into squares.
  6. Place a spoonful of the spinach mixture in the center of each square.
  7. Fold the pastry over to form triangles and seal the edges with a fork.
  8. Place the pies on a baking sheet lined with parchment paper.
  9. Brush the tops with a little beaten egg for a golden finish.
  10. Bake for 20-25 minutes or until golden brown.
