- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 1 cup vegetable broth
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent.
- Add minced garlic and cook for another minute until fragrant.
- Stir in the chili powder, cumin, and smoked paprika, cooking for an additional minute.
- Add the pumpkin puree, black beans, kidney beans, diced tomatoes, and vegetable broth. Stir to combine.
- Bring the mixture to a simmer, then reduce heat and let it cook for 20-30 minutes, stirring occasionally.
- Season with salt and pepper to taste before serving.
