- 1 cup all-purpose flour
- 2 large eggs
- 1 cup milk
- 1/2 cup pumpkin puree
- 1 tablespoon sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg

- 2 tablespoons melted butter
- 1 cup mascarpone cheese
- 2 tablespoons powdered sugar

Instructions
- In a mixing bowl, whisk together the flour, eggs, milk, pumpkin puree, sugar, cinnamon, nutmeg, and salt until smooth.
- Heat a non-stick skillet over medium heat and add a little melted butter.
- Pour a small amount of batter into the skillet, swirling to coat the bottom evenly.
- Cook for about 2 minutes until the edges start to lift, then flip and cook for another minute.
- Repeat with the remaining batter, stacking the crepes on a plate.
- In another bowl, mix the mascarpone cheese, powdered sugar, and vanilla extract until smooth.
- Spread a layer of the mascarpone mixture on each crepe, then fold or roll them up.
- Serve warm, optionally dusted with additional powdered sugar or cinnamon.
Notes
- For a richer flavor, use brown sugar instead of white sugar.
- These crepes can be made ahead of time and reheated before serving.
