  • 2 tablespoons melted butter
  • 1 cup mascarpone cheese
  • 2 tablespoons powdered sugar

Instructions

  1. In a mixing bowl, whisk together the flour, eggs, milk, pumpkin puree, sugar, cinnamon, nutmeg, and salt until smooth.
  2. Heat a non-stick skillet over medium heat and add a little melted butter.
  3. Pour a small amount of batter into the skillet, swirling to coat the bottom evenly.
  4. Cook for about 2 minutes until the edges start to lift, then flip and cook for another minute.
  5. Repeat with the remaining batter, stacking the crepes on a plate.
  6. In another bowl, mix the mascarpone cheese, powdered sugar, and vanilla extract until smooth.
  7. Spread a layer of the mascarpone mixture on each crepe, then fold or roll them up.
  8. Serve warm, optionally dusted with additional powdered sugar or cinnamon.
