- 1 loaf of bread, cubed
- 1 cup pumpkin puree
- 4 large eggs
- 2 cups milk
- 1/2 cup brown sugar
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon salt
- 1/4 cup maple syrup (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, whisk together the pumpkin puree, eggs, milk, brown sugar, vanilla extract, pumpkin pie spice, and salt.
- Add the cubed bread to the mixture and stir until well combined.
- Pour the mixture into a greased baking dish and let it sit for at least 30 minutes or overnight in the refrigerator.
- Bake for 45-50 minutes or until the top is golden brown and the center is set.
- Drizzle with maple syrup before serving, if desired.
Notes
- For a sweeter casserole, increase the brown sugar to taste.
- Can be made ahead of time and stored in the refrigerator overnight.
- Serve with whipped cream or powdered sugar for extra indulgence.
