Ingredients

  • 8 oz elbow macaroni
  • 1 cup pumpkin puree
  • 2 cups shredded sharp cheddar cheese
  • 1 cup milk
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp nutmeg
  • Salt and pepper to taste


Instructions

  1. Cook the elbow macaroni according to package instructions; drain and set aside.
  2. In a large saucepan, combine pumpkin puree, milk, garlic powder, onion powder, nutmeg, salt, and pepper over medium heat.
  3. Stir in the cheddar cheese and Parmesan cheese until melted and smooth.
  4. Add the cooked macaroni to the cheese sauce and mix until well combined.
  5. Serve warm, garnished with additional cheese if desired.

Notes

  • For a spicier version, add a pinch of cayenne pepper.
