- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 cup vegetable oil
- 1 cup canned pumpkin puree
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup chocolate frosting
- Green candy melts (for leaves)
- Gummy pumpkins (for decoration)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, mix the vegetable oil, pumpkin puree, eggs, and vanilla extract until well combined.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
- Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cupcakes to cool completely before frosting.
- Frost the cooled cupcakes with chocolate frosting and decorate with green candy melts and gummy pumpkins to create a pumpkin patch effect.
Notes
- For a more intense pumpkin flavor, use pumpkin pie spice instead of individual spices.
- Store cupcakes in an airtight container at room temperature for up to 3 days.
- These cupcakes can be made ahead of time and frozen for later use.
