Ingredients

  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup vegetable oil
  • 1 cup canned pumpkin puree
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chocolate frosting
  • Green candy melts (for leaves)
  • Gummy pumpkins (for decoration)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, mix the vegetable oil, pumpkin puree, eggs, and vanilla extract until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the cupcakes to cool completely before frosting.
  8. Frost the cooled cupcakes with chocolate frosting and decorate with green candy melts and gummy pumpkins to create a pumpkin patch effect.

Notes

  • For a more intense pumpkin flavor, use pumpkin pie spice instead of individual spices.
