- 1 cup pumpkin purée
- 2 large onions, sliced

- 1 egg (for egg wash, optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and add sliced onions; cook until caramelized, about 15-20 minutes.
- In a bowl, mix together ricotta, pumpkin purée, salt, pepper, nutmeg, and thyme.
- Roll out the pie crust and place it in a tart pan.
- Spread the ricotta mixture evenly over the crust, then top with caramelized onions.
- If desired, brush the edges of the crust with egg wash.
- Bake for 30-35 minutes until the tart is set and lightly golden.
- Let it cool slightly before slicing and serving.
