Ingredients

  • 1 lb chicken thighs, boneless and skinless
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • Salt and pepper to taste
  • Tortillas for serving

Instructions

  1. In a bowl, combine olive oil, chili powder, cumin, garlic powder, salt, and pepper.
  2. Add the chicken thighs to the bowl and coat them well with the spice mixture.
  3. Heat a skillet over medium-high heat and add the chicken thighs.
  4. Cook for about 5-7 minutes on each side until fully cooked.
  5. Remove the chicken from the skillet and let it rest for a few minutes before slicing.
  6. In the same skillet, add the sliced bell pepper and onion, cooking until softened.
  7. Serve the sliced chicken and vegetables in tortillas.
