- 1 lb chicken thighs, boneless and skinless
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 bell pepper, sliced
- 1 onion, sliced
- Salt and pepper to taste
- Tortillas for serving
Instructions
- In a bowl, combine olive oil, chili powder, cumin, garlic powder, salt, and pepper.
- Add the chicken thighs to the bowl and coat them well with the spice mixture.
- Heat a skillet over medium-high heat and add the chicken thighs.
- Cook for about 5-7 minutes on each side until fully cooked.
- Remove the chicken from the skillet and let it rest for a few minutes before slicing.
- In the same skillet, add the sliced bell pepper and onion, cooking until softened.
- Serve the sliced chicken and vegetables in tortillas.
Notes
- Feel free to add other vegetables like zucchini or mushrooms.
- Serve with your favorite toppings such as salsa, guacamole, or sour cream.
