- 2 pounds beef tenderloin
- 1 cup spinach, chopped
- 1 cup mushrooms, diced
- 1/2 cup cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil for searing
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil and sauté garlic, mushrooms, and spinach until soft.
- In a bowl, mix the sautéed vegetables with cream cheese and Parmesan cheese.
- Cut a pocket in the beef tenderloin and stuff it with the cheese and vegetable mixture.
- Season the outside of the tenderloin with salt and pepper.
- Heat more olive oil in a skillet and sear the tenderloin on all sides until browned.
- Transfer the tenderloin to the oven and roast for about 25-30 minutes, or until the internal temperature reaches 145°F (63°C).
- Let it rest for 10 minutes before slicing and serving.
Notes
- For added flavor, consider marinating the beef overnight.
- Serve with a side of roasted vegetables or mashed potatoes.
- This dish can be prepared ahead of time and reheated before serving.
