Description

A delicious and easy recipe for a stuffed beef tenderloin, perfect for your Christmas dinner.


Ingredients

  • 2 pounds beef tenderloin
  • 1 cup spinach, chopped
  • 1 cup mushrooms, diced
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for searing


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil and sauté garlic, mushrooms, and spinach until soft.
  3. In a bowl, mix the sautéed vegetables with cream cheese and Parmesan cheese.
  4. Cut a pocket in the beef tenderloin and stuff it with the cheese and vegetable mixture.
  5. Season the outside of the tenderloin with salt and pepper.
  6. Heat more olive oil in a skillet and sear the tenderloin on all sides until browned.
  7. Transfer the tenderloin to the oven and roast for about 25-30 minutes, or until the internal temperature reaches 145°F (63°C).
  8. Let it rest for 10 minutes before slicing and serving.

Notes

  • For added flavor, consider marinating the beef overnight.
  • Serve with a side of roasted vegetables or mashed potatoes.
