A quick and easy recipe for delicious chicken enchiladas that everyone will love.

			- 2 cups cooked shredded chicken
- 1 cup enchilada sauce
- 1 cup shredded cheese
- 8 small flour tortillas
- 1/2 cup chopped onions
- 1/2 cup sour cream
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat and sauté onions until translucent.
- Add the shredded chicken and half of the enchilada sauce to the skillet, mixing well.
- Warm the tortillas in a microwave for 30 seconds to make them pliable.
- Fill each tortilla with the chicken mixture, roll them up, and place them seam-side down in a baking dish.
- Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with cheese.
- Bake in the preheated oven for 20 minutes or until the cheese is melted and bubbly.
- Serve hot with sour cream on the side.
Notes
- Feel free to add black beans or corn for extra flavor.
- Can be made ahead of time and refrigerated before baking.
- Use corn tortillas for a gluten-free option.
