Deliciously creamy and easy to make at home, these raspberry cheesecake bars are the perfect summer dessert.

- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup fresh raspberries
- 1 cup whipped cream
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs and melted butter until combined.
- Press the mixture into the bottom of a greased 9×9 inch baking dish.
- In another bowl, beat the cream cheese until smooth.
- Add powdered sugar and vanilla extract, mixing until well combined.
- Fold in the whipped cream gently.
- Spread the cream cheese mixture over the crust.
- Top with fresh raspberries, pressing them slightly into the mixture.
- Bake for 25-30 minutes or until set.
- Let cool, then refrigerate for at least 2 hours before cutting into bars.
Notes
- For a no-bake version, refrigerate the crust and filling instead of baking.
- Feel free to substitute other berries if desired.
- These bars can be stored in the refrigerator for up to 5 days.
