Description

Deliciously creamy and easy to make at home, these raspberry cheesecake bars are the perfect summer dessert.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh raspberries
  • 1 cup whipped cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until combined.
  3. Press the mixture into the bottom of a greased 9×9 inch baking dish.
  4. In another bowl, beat the cream cheese until smooth.
  5. Add powdered sugar and vanilla extract, mixing until well combined.
  6. Fold in the whipped cream gently.
  7. Spread the cream cheese mixture over the crust.
  8. Top with fresh raspberries, pressing them slightly into the mixture.
  9. Bake for 25-30 minutes or until set.
  10. Let cool, then refrigerate for at least 2 hours before cutting into bars.

Notes

  • For a no-bake version, refrigerate the crust and filling instead of baking.
  • Feel free to substitute other berries if desired.
  • These bars can be stored in the refrigerator for up to 5 days.
