Description

A delightful and easy-to-make dessert featuring a creamy cheesecake base swirled with fresh raspberries.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh raspberries

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until combined.
  3. Press the mixture into the bottom of a greased 9×9 inch baking pan.
  4. In a separate bowl, beat the cream cheese and sugar until smooth.
  5. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  6. Pour the cream cheese mixture over the crust in the baking pan.
  7. Drop spoonfuls of raspberries on top and swirl gently with a knife.
  8. Bake for 30-35 minutes or until the center is set.
  9. Allow to cool, then refrigerate for at least 4 hours before cutting into bars.

Notes

  • For a stronger raspberry flavor, you can add raspberry puree to the cream cheese mixture.
  • These bars can be topped with whipped cream for extra indulgence.
