Description
Delicious and easy-to-make raspberry crumb bars with a buttery crumb topping.
Ingredients

- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, melted
- 1 cup fresh raspberries
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice
- 1/2 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix flour, oats, brown sugar, and melted butter until crumbly.
- Press half of the mixture into the bottom of a greased baking dish.
- In another bowl, combine raspberries, granulated sugar, lemon juice, and vanilla extract.
- Spread the raspberry mixture over the crust in the baking dish.
- Sprinkle the remaining crumb mixture on top of the raspberries.
- Bake for 25-30 minutes or until golden brown.
- Allow to cool before cutting into bars.

Notes
- For a sweeter taste, add more sugar to the raspberry mixture.
- These bars can be stored in an airtight container for up to a week.
- Serve with whipped cream or ice cream for an extra treat.
