Raspberry Crumb Bars

Description

Delicious and easy-to-make raspberry crumb bars with a buttery crumb topping.


Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 1 cup fresh raspberries
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix flour, oats, brown sugar, and melted butter until crumbly.
  3. Press half of the mixture into the bottom of a greased baking dish.
  4. In another bowl, combine raspberries, granulated sugar, lemon juice, and vanilla extract.
  5. Spread the raspberry mixture over the crust in the baking dish.
  6. Sprinkle the remaining crumb mixture on top of the raspberries.
  7. Bake for 25-30 minutes or until golden brown.
  8. Allow to cool before cutting into bars.

Notes

  • For a sweeter taste, add more sugar to the raspberry mixture.
