Description

A delicious and visually stunning cheesecake inspired by the Ravenclaw house from Harry Potter, featuring a rich blueberry flavor and a galaxy-like appearance.


Ingredients

  • 2 cups crushed graham crackers
  • 1/2 cup unsalted butter, melted
  • 1 cup sugar
  • 4 (8 oz) packages cream cheese, softened
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup blueberry puree
  • Blue food coloring (optional)
  • Fresh blueberries for garnish


Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, mix the crushed graham crackers with melted butter and 1/4 cup of sugar until well combined.
  3. Press the mixture into the bottom of a springform pan to form the crust.
  4. In a large mixing bowl, beat the cream cheese until smooth.
  5. Add the remaining sugar, sour cream, and vanilla extract, mixing until well combined.
  6. Add the eggs one at a time, mixing well after each addition.
  7. Stir in the blueberry puree and blue food coloring if desired.
  8. Pour the cheesecake batter over the crust in the springform pan.
  9. Bake for 55-60 minutes or until the center is set but still slightly jiggly.
  10. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
  11. Refrigerate for at least 4 hours or overnight before serving.
  12. Garnish with fresh blueberries before serving.
