A delicious and visually stunning cheesecake inspired by the Ravenclaw house from Harry Potter, featuring a rich blueberry flavor and a galaxy-like appearance.

- 2 cups crushed graham crackers
- 1/2 cup unsalted butter, melted
- 1 cup sugar
- 4 (8 oz) packages cream cheese, softened
- 1 cup sour cream
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup blueberry puree
- Blue food coloring (optional)
- Fresh blueberries for garnish
Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, mix the crushed graham crackers with melted butter and 1/4 cup of sugar until well combined.
- Press the mixture into the bottom of a springform pan to form the crust.
- In a large mixing bowl, beat the cream cheese until smooth.
- Add the remaining sugar, sour cream, and vanilla extract, mixing until well combined.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the blueberry puree and blue food coloring if desired.
- Pour the cheesecake batter over the crust in the springform pan.
- Bake for 55-60 minutes or until the center is set but still slightly jiggly.
- Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
- Refrigerate for at least 4 hours or overnight before serving.
- Garnish with fresh blueberries before serving.
