Description

Deliciously soft and chewy red velvet cookies filled with cream cheese frosting, perfect for any occasion.


Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 tablespoon cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 large egg
  • 1 tablespoon red food coloring
  • 1 teaspoon vanilla extract
  • 1/2 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In a separate bowl, cream together the butter and granulated sugar until light and fluffy.
  4. Add the egg, red food coloring, and vanilla extract to the butter mixture and mix until combined.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until the edges are set. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
  8. In a bowl, mix together the cream cheese, powdered sugar, and vanilla extract until smooth to make the frosting.
  9. Once the cookies are completely cool, spread a generous amount of frosting on the flat side of one cookie and sandwich it with another cookie.
  10. Repeat with the remaining cookies and frosting.
