Description

A vibrant and creamy pasta salad perfect for spring picnics and gatherings.


Ingredients

Scale
  • 8 ounces of rotini pasta
  • 1 cup of cherry tomatoes, halved
  • 1 cup of cucumber, diced
  • 1/2 cup of red bell pepper, diced
  • 1/2 cup of black olives, sliced
  • 1/2 cup of shredded carrots
  • 1 cup of mayonnaise
  • 2 tablespoons of apple cider vinegar
  • 1 teaspoon of garlic powder
  • Salt and pepper to taste


Instructions

  1. Cook the rotini pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooled pasta, cherry tomatoes, cucumber, red bell pepper, black olives, and shredded carrots.
  3. In a separate bowl, mix together the mayonnaise, apple cider vinegar, garlic powder, salt, and pepper.
  4. Pour the dressing over the pasta and vegetables, and toss to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving.
