A vibrant and creamy pasta salad perfect for spring picnics and gatherings.
Ingredients

- 8 ounces of rotini pasta
- 1 cup of cherry tomatoes, halved
- 1 cup of cucumber, diced
- 1/2 cup of red bell pepper, diced
- 1/2 cup of black olives, sliced
- 1/2 cup of shredded carrots
- 1 cup of mayonnaise
- 2 tablespoons of apple cider vinegar
- 1 teaspoon of garlic powder
- Salt and pepper to taste
Instructions
- Cook the rotini pasta according to package instructions. Drain and let cool.
- In a large bowl, combine the cooled pasta, cherry tomatoes, cucumber, red bell pepper, black olives, and shredded carrots.
- In a separate bowl, mix together the mayonnaise, apple cider vinegar, garlic powder, salt, and pepper.
- Pour the dressing over the pasta and vegetables, and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
