Description

A delightful spread made from fresh rhubarb, sugar, and lemon juice that adds a burst of flavor to toast, pastries, and yogurt.

Ingredients

Scale
  • 2 cups fresh rhubarb, chopped
  • 1 cup sugar
  • 1 tablespoon lemon juice

Instructions

  1. Chop the fresh rhubarb and place it in a saucepan.
  2. Add sugar and a splash of lemon juice.
  3. Simmer over medium heat until the rhubarb breaks down and the mixture thickens, about 15-20 minutes.
  4. Remove from heat and let cool slightly.
  5. Blend the mixture until smooth and creamy.
  6. Transfer to a jar and store in the refrigerator. Enjoy on toast, pastries, or yogurt.

Notes

For a sugar-free version, consider using Stevia, Monk fruit, or Allulose instead of sugar.
