- 2 cups fresh rhubarb, chopped
- 1 cup sugar
- 1 tablespoon lemon juice
Instructions
- Chop the fresh rhubarb and place it in a saucepan.
- Add sugar and a splash of lemon juice.
- Simmer over medium heat until the rhubarb breaks down and the mixture thickens, about 15-20 minutes.
- Remove from heat and let cool slightly.
- Blend the mixture until smooth and creamy.
- Transfer to a jar and store in the refrigerator. Enjoy on toast, pastries, or yogurt.
Notes
For a sugar-free version, consider using Stevia, Monk fruit, or Allulose instead of sugar.
