- 1 box of cake mix
- 1 cup of chopped rhubarb
- 3 eggs
- 1 cup of water or milk
- 1/2 cup of vegetable oil
- 1 teaspoon of vanilla extract
- 1 cup of sugar
- 1 teaspoon of cinnamon (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a baking pan.
- Combine the cake mix, eggs, water (or milk), vegetable oil, and vanilla extract in a large bowl. Mix until smooth.
- Fold in the chopped rhubarb and sugar gently. Add cinnamon for extra flavor if desired.
- Pour the batter into the prepared baking pan.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool before serving.
Notes
Use fresh rhubarb for the best flavor. Don’t overmix the batter; a few lumps are fine.
