- 1 leg of lamb (about 2 kg)
- 2 cups fresh breadcrumbs
- 1/2 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 2 cloves garlic, minced
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 180°C (350°F).
- Season the leg of lamb with salt and pepper.
- In a bowl, mix the breadcrumbs, parsley, mint, garlic, and olive oil.
- Press the herb mixture onto the top of the lamb.
- Place the lamb in a roasting pan and roast for about 1.5 hours, or until the internal temperature reaches 60°C (140°F) for medium-rare.
- Let the lamb rest for 15 minutes before slicing.
