Ingredients

  • 1 leg of lamb (about 2 kg)
  • 2 cups fresh breadcrumbs
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Season the leg of lamb with salt and pepper.
  3. In a bowl, mix the breadcrumbs, parsley, mint, garlic, and olive oil.
  4. Press the herb mixture onto the top of the lamb.
  5. Place the lamb in a roasting pan and roast for about 1.5 hours, or until the internal temperature reaches 60°C (140°F) for medium-rare.
  6. Let the lamb rest for 15 minutes before slicing.
