Ingredients

- 4 medium beets, roasted and sliced
- 6 fresh figs, quartered
- 4 cups mixed greens
- 1/2 cup goat cheese, crumbled
- 1/4 cup walnuts, toasted
- 3 tablespoons balsamic vinaigrette
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wrap the beets in aluminum foil and roast for about 45 minutes, or until tender.
- Let the beets cool, then peel and slice them.
- In a large bowl, combine the mixed greens, roasted beets, figs, goat cheese, and walnuts.
- Drizzle with balsamic vinaigrette and toss gently to combine.
- Season with salt and pepper to taste before serving.

- For a vegan option, omit the goat cheese.
