- 1 pound of carrots, peeled and cut into sticks
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 cup ricotta cheese
- 2 tablespoons honey
- 1 teaspoon red pepper flakes

Instructions
- Preheat the oven to 425°F (220°C).
- In a bowl, toss the carrot sticks with olive oil, salt, and pepper.
- Spread the carrots on a baking sheet in a single layer.
- Roast in the oven for 25-30 minutes, or until tender and caramelized.
- While the carrots are roasting, whip the ricotta cheese until smooth.
- In a small saucepan, heat the honey and stir in the red pepper flakes.
- Once the carrots are done, remove them from the oven and let them cool slightly.
- Serve the roasted carrots topped with whipped ricotta and drizzled with hot honey. Garnish with fresh herbs if desired.
