Description

Deliciously rich brownies infused with the sweet and tart flavor of roasted cherries.


Ingredients

  • 1 cup fresh cherries, pitted and halved
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Spread the pitted cherries on a baking sheet and roast for 15-20 minutes until they are soft and caramelized.
  3. In a mixing bowl, combine the melted butter and sugar, and mix well.
  4. Add the eggs and vanilla extract, and stir until combined.
  5. In another bowl, whisk together the flour, cocoa powder, salt, and baking powder.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Fold in the roasted cherries.
  8. Pour the batter into a greased baking pan and spread evenly.
  9. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  10. Let cool before cutting into squares and serving.

Notes

  • For a richer flavor, add chocolate chips to the batter.
  • Store leftovers in an airtight container at room temperature for up to 3 days.
