Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the sliced summer squashes with olive oil, salt, and black pepper.
- Spread the squash in a single layer on a baking sheet.
- Roast in the preheated oven for 20 minutes.
- Remove from the oven and sprinkle with grated Parmesan cheese.
- Return to the oven and roast for an additional 5-10 minutes, until the cheese is melted and golden.
