Ingredients

- 2 large sweet potatoes
- 4 oz goat cheese
- 1/2 cup dried cranberries
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and slice the sweet potatoes into 1/2 inch rounds.
- Toss the sweet potato rounds with olive oil, salt, and pepper.
- Arrange the rounds on a baking sheet in a single layer.
- Roast in the preheated oven for 25-30 minutes, flipping halfway through, until tender and slightly caramelized.
- Remove from the oven and let cool slightly.
- Top each sweet potato round with a dollop of goat cheese and a sprinkle of dried cranberries.
- Serve warm or at room temperature.
Notes
- For added flavor, consider drizzling with balsamic glaze before serving.
