- 1 rotisserie chicken, shredded
- 2 cups mushrooms, sliced
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 6 cups chicken broth
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 cup heavy cream (optional)
Instructions
- In a large pot, heat olive oil over medium heat.
- Add onions, carrots, and celery, and sauté until softened.
- Stir in garlic and mushrooms, cooking until mushrooms are tender.
- Add shredded rotisserie chicken to the pot.
- Pour in chicken broth and add thyme, rosemary, salt, and pepper.
- Bring the soup to a boil, then reduce heat and let simmer for 20 minutes.
- If using, stir in heavy cream and heat through before serving.
Notes
- Feel free to add other vegetables like peas or corn for extra nutrition.
- This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
- For a thicker soup, you can blend a portion of it and then mix it back in.
