  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup heavy cream (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onions, carrots, and celery, and sauté until softened.
  3. Stir in garlic and mushrooms, cooking until mushrooms are tender.
  4. Add shredded rotisserie chicken to the pot.
  5. Pour in chicken broth and add thyme, rosemary, salt, and pepper.
  6. Bring the soup to a boil, then reduce heat and let simmer for 20 minutes.
  7. If using, stir in heavy cream and heat through before serving.
