  • 1 lemon, zested and juiced
  • 1 tablespoon fresh dill, chopped
  • 1 egg, beaten (for egg wash)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, combine the flaked salmon, cooked rice, lemon zest, lemon juice, dill, salt, and pepper.
  3. Roll out the puff pastry on a floured surface and cut into squares.
  4. Place a spoonful of the salmon mixture in the center of each pastry square.
  5. Fold the pastry over to create a triangle and seal the edges with a fork.
  6. Brush the tops with beaten egg.
  7. Bake in the preheated oven for 20-25 minutes or until golden brown.
  8. Serve warm and enjoy!
